Eggnog Pancakes

Creamy eggnog, cinnamon and nutmeg in fluffy pancake form? Yes, please.

But first, let’s back up: I had never even tried eggnog before last week. I know! And the strangest part is that I was still somehow dreaming of eggnog pancakes. The idea of plain eggnog weirded me out (What is it? Am I drinking eggs?!), but I knew that I could get behind eggnog pancakes. I’m pretty sure (almost) anything is good in pancake form.

And, as it turns out, plain eggnog is pretty good. I guess my Dad’s been on to something with his Christmas eggnog obsession over the years 😉 So, these pancakes are really for him. They’re the perfect holiday breakfast, and I can’t wait to make them with my family next week! Eggnog Pancakes
