Creamy eggnog, cinnamon and nutmeg in fluffy pancake form? Yes, please.
But first, let’s back up: I had never even tried eggnog before last week. I know! And the strangest part is that I was still somehow dreaming of eggnog pancakes. The idea of plain eggnog weirded me out (What is it? Am I drinking eggs?!), but I knew that I could get behind eggnog pancakes. I’m pretty sure (almost) anything is good in pancake form.
And, as it turns out, plain eggnog is pretty good. I guess my Dad’s been on to something with his Christmas eggnog obsession over the years 😉 So, these pancakes are really for him. They’re the perfect holiday breakfast, and I can’t wait to make them with my family next week!
- 1 C eggnog
- ½ C milk (regular or almond milk)
- 1 egg
- 2 T butter, melted and cooled
- 1½ C flour
- 3½ t baking powder
- 1 t salt
- ¼ t cinnamon
- ¼ t nutmeg
- Melt your butter and then let it cool for a few minutes. In a large mixing bowl, mix together the eggnog, milk and egg. Add the butter.
- Add the rest of the ingredients and mix well. Heat a large skillet up and make your pancakes!
